Are there any scripting examples for transmitting I2C data via I2C/SPI Tap. Or any facilities in the UI for transmitting I2C

The I2C/SPI Tap is a read-only sniffer device; it doesn't have the ability to drive lines. In the future, we plan to introduce plugins for I2C and SPI transmission (using Raspberry Pis or similar ARM Linux boxes), but at the moment, IO Ninja doesn't support that.
